Discover the pinnacle of Peruvian pisco craftsmanship with Barsol Mosto Verde Italia—a premium expression that represents the most refined and labor-intensive style of pisco production. Distilled from partially fermented Italia grape must, this exceptional spirit offers extraordinary aromatic complexity and silky smoothness that sets it apart from all other piscos.
"Mosto Verde" translates to "green must," referring to the traditional technique of distilling grape must before fermentation is complete—while natural sugars still remain. This method requires significantly more grapes per bottle (up to 8kg compared to 4kg for traditional pisco), resulting in a spirit with remarkable body, natural sweetness, and unparalleled aromatic intensity.
Italia is the most aromatic of all pisco grape varieties, known for its intensely floral and fruity character. When crafted in the Mosto Verde style, Italia grapes produce a pisco of extraordinary elegance—think of it as pisco's answer to fine Cognac or aged rum in terms of complexity and refinement.
Barsol Mosto Verde Italia displays crystal clarity that belies its rich character. The nose is spectacularly aromatic: fresh white flowers, ripe tropical fruit, lychee, rose petals, jasmine, and sweet grape must create an intoxicating bouquet.
On the palate, the pisco is lush and voluptuous. Flavors of white peach, Asian pear, orange blossom, and honeydew melon unfold in waves. The texture is remarkably silky and full-bodied with a subtle natural sweetness from residual grape sugars. There's an elegant balance between fruit intensity and refined spirit character.
The finish is long, smooth, and perfumed with lingering floral notes and tropical fruit—a testament to the quality and craftsmanship in every bottle.
