Bellwoods Kölsch (simply titled Kölsch) is a refined, modern take on the traditional German style, released in 2024 to celebrate the 10th anniversary of Escarpment Labs (a renowned yeast laboratory in Ontario). While Bellwoods is often synonymous with hazy IPAs and wild sours, this beer showcases their ability to master delicate, yeast-driven styles. It is designed to be the "ideal sunny-day sipper" a crisp, elegant hybrid that strikes a perfect balance between the fruitiness of an ale and the clean finish of a lager.
Beer Description
This Kölsch pours a brilliant, translucent pale gold with a soft, frothy white head and lively carbonation.
Aroma: The nose is subtle, pretty, and highly aromatic. It leads with a distinct white wine-like minerality, followed by delicate notes of chamomile, fresh rain, and wildflower honey. It lacks the heavy "hoppy" punch of a Pale Ale, focusing instead on the sophisticated esters produced by the yeast.
Palate: On the tongue, it is light-bodied and remarkably refreshing. It leads with a soft, crackery malt sweetness that quickly gives way to a complex profile of crisp pear, green apple, and a touch of herbal tea. The mouthfeel is famously "clean," with a dry, mineral-driven finish that is both quenching and sophisticated.
Profile: It has a highly sessionable ABV of 4.5% and a very low, rounded bitterness that stays in the background, allowing the yeast and malt to shine.
Technical Notes: The heart of this beer is the Pink Boots Kölsch yeast strain (a Kölsch-specific strain with deep German roots provided by Escarpment Labs). This yeast is responsible for the signature "winey" minerality and fruit esters. It is brewed with high-quality pilsner malt and lightly hopped with traditional varieties to maintain its Old World character while delivering a "modern" level of technical polish.
