Cañada Aguardiente de Oaxaca Rum 1L is an artisanal, agricole-style Mexican rum produced by third-generation distillers of the Krassel family in the remote cloud forest of Santa María Tlalixtac, Oaxaca. Crafted from 100% organic Java sugarcane grown at altitudes up to 4,000 feet above sea level, the cane juice is naturally fermented with wild yeast in outdoor tanks and distilled in custom copper stills to create an expressive, savory, and complex high-proof spirit.
Food Pairing: Grilled octopus, ceviche, slow-roasted pork carnitas, spicy tacos, aged goat cheese, and dark chocolate.
Tasting Notes : Crystal clear in appearance, offering a bold, oily, and expressive full-bodied mouthfeel on the palate.
Nose : Fresh sugarcane juice, black olive brine, dried herbs, slate minerality, anise, and bright citrus zest.
Palate : Sharp and savory with flavors of fresh raw cane, anise, oregano, white pepper, briny olives, and earthy minerality.
Finish : Long, warm, and crisp with lingering notes of herbal spice, pepper, and clean cane sweetness.
Serve : Best served neat at room temperature in a Glencairn glass, with a few drops of water to soften the proof, in a traditional Ti' Punch, or as a briny base in craft cocktail riffs like a Daiquiri or Dirty Martini.
