From the heart of Jerez, Spain, Fernando de Castilla Classico Manzanilla is a brilliant expression of the Palomino grape, aged under a delicate layer of yeast known as “velo de flor.” Crafted using the traditional solera system in American oak casks, this sherry undergoes three years of biological aging, resulting in a crisp and lively character. The bodega, known for its dedication to pure, untreated sherries, continues to honor the region’s rich heritage while delivering wines of exceptional finesse.
Pale straw yellow in color, this Manzanilla opens with a tangy, saline aroma reminiscent of fresh sea air. The palate is light yet assertive, beginning with soft apple and citrus before unfolding into a nutty, savory bite with a briny, lingering finish. More delicate and crackling than a Fino, it captures the vibrancy of the coastal influence, making it a refreshing yet complex choice.
Best served well-chilled in a large white wine glass, this sherry shines alongside salted almonds, seafood tapas, and light fish dishes. Its crisp profile pairs exceptionally well with smoked salmon, making it one of the few wines that can truly enhance its flavors. With an ABV of 15%, it delivers a beautifully dry and invigorating sip that embodies the essence of Jerez.
