Tasting notes: Shine Muscat, Pineapple, Mango, Panela
This coffee is from the Alo Main Station and has undergone a whole cherry anaerobic fermentation in ‘mosto’ using the leachate collected from the coffee cherries. It is a technique that has gained popularity in the recent years as this method tends to create intense flavour profiles and opens many more options for producers.
Alo was founded by Tamiru Tadesse and his wife, Messi, to bring more recognition to coffees from Bensa in Sidama. Their first submission won Ethiopia’s Cup of Excellence in 2021. This lot focuses on the 74158 selection and mosto-assisted natural processing, with a fruit-led profile of grape, pineapple and mango.
