La Higuera Texanum Sotol is an artisanal, wild-harvested Mexican spirit crafted by Master Sotolero Gerardo Ruelas using wild Dasylirion texanum plants harvested in Chihuahua. Pit-cooked in an outdoor conical oven fired with oak, hand-milled, naturally fermented in wooden vats, and double-distilled in copper pot stills, it delivers an herb-forward, floral, and deeply mineral profile.
Food Pairing: Grilled seafood, ceviche, fresh goat cheese, citrus salad, or herb-roasted chicken.
Tasting Notes : Crystal clear in appearance with a crisp, medium-light, and silky mouthfeel.
Nose : Bright citrus peel, fresh green herbs, floral lavender, mint, and subtle limestone minerality.
Palate : Clean and herbal with flavors of lemongrass, green pepper, sweet agave-like sweetness, and mild earthy smoke.
Finish : Crisp, dry, and refreshing with lingering herbal notes, gentle spice, and clean minerality.
Serve : Serve neat at room temperature in a glass tasting vessel or traditional copita.
