Tasting notes: Pineapple, Orange, Bergamot
Las Marias is an expressive Wush Wush from José Giraldo in Pijao, Quindío, Colombia. Manhattan extended the anaerobic fermentation to amplify the variety's exotic floral and tropical character. In espresso, the cup brings vibrant pineapple, orange, and bergamot with juicy sweetness and a refreshing mouthfeel.
José is a third-generation coffee producer whose family has grown coffee for more than 50 years. For this lot, ripe cherries were selectively harvested, sealed in a cold room at 14°C for a 120-hour whole-cherry fermentation, and slowly shade dried on raised beds. After 20 days, the cherries returned to the cold room for a seven-day enzymatic fermentation before drying was completed.
