This release completely shatters traditional resting methods. Montagave doesn't rely on standard stainless steel, choosing instead a massive ten-ton concrete egg. Resting the unaged spirit inside this custom vessel triggers gentle micro-oxygenation, subtly shifting the pH to pull intense, structural minerality straight from the liquid. It's an Old-World technique yielding a beautifully rich, orbital mouthfeel.
Cascahuín distills this exceptional spirit at the revered NOM 1123. They don't rush the process. Open-air fermentation happens naturally inside massive concrete tanks. The Rosales family patiently roasts mature agave in traditional brick ovens for three days before crushing the piñas with a mechanical roller mill. Bottling at 90 proof expertly preserves the volatile oils and dense aromatics that lower-proof spirits invariably abandon.
- Crafted by the Rosales family at NOM 1123
- Rested four weeks in a custom concrete egg
- Additive-free and bottled at 45% ABV
