Peerless refuses to take shortcuts. The revived Kentucky distillery champions the sweet mash process instead of the industry-standard sour mash, meaning every batch starts completely fresh with its own unique yeast ecosystem. This meticulous method demands absolute cleanliness and precise temperature control throughout the entire fermentation cycle. The resulting payoff is immense. You get a wildly vibrant rye whiskey that simply won't conform to traditional expectations. It boasts an untamed, spectacular personality.
Uncompromised liquid defines this release. By utilizing a remarkably low barrel entry proof, the distillers extract an intricately layered, profoundly rich profile from the freshly charred American white oak. Skipping the chill-filtration process ensures the spirit retains a luxurious, viscous mouthfeel alongside an incredibly dense flavor matrix. No water touches this whiskey. Every individual barrel selection stands fiercely alone as an utterly singular expression of their distinct craft.
Finding such complexity remains difficult. While many producers blend away their eccentricities, Peerless embraces the distinct nuances that emerge uniquely from barrel to barrel. Expect a heavy, intricate interplay of dark, robust spices layered over a foundational sweetness that completely defies standard rye expectations while rewarding adventurous palates. This pour commands absolute attention. It effortlessly balances crackling heat with a profound depth that will undoubtedly leave you captivated.
