Tasting notes: Jasmine, clementine and black tea
Jose Ignacio and Pepe Jijón produce this Typica Mejorado at Fincas del Putushio in Loja, Ecuador. The project began with coffee planted in 2019 at high elevation after the family focused first on reforestation and soil regeneration.
The washed coffee is grown at 2,200 metres and dried in a darkroom. Phil & Sebastian optimizes the omniroast for filter while retaining enough structure for a carefully dialled-in espresso.
