Prince Pastis de Marseille is a traditionally crafted, boldly flavored anise-based liqueur that exudes Provençal charm. With its smooth texture, bright licorice and star-anise notes, and refreshing complexity, it’s a quintessential expression of southern French apéritif culture—perfect for slow, sunlit sips or inventive culinary uses.
Origins & Style
-
Produced in the classic Pastis de Marseille style, this liqueur must meet a minimum 45% ABV and contains a higher concentration of anethole, delivering a more pronounced anise profile compared to other pastis expressions.
-
It belongs to the broader tradition of pastis, an iconic Mediterranean spirit born in early 20th-century France after the ban on absinthe, typically infused with star anise, licorice root, fennel, and other local spices.
Aromatics (Nose)
The aroma is richly aniseed-forward—think warm liquorice candy, star anise, and bright herbal hints that are both seductively bold and invitingly crisp.
Palate & Texture
Enjoyed neat or lightly diluted, it offers a smooth, full-bodied texture. The flavor journey begins with forward anise and licorice, transitions into soft sweetness, and unfolds with lingering spice on the finish.
Ritual & Serving
-
Best served diluted with chilled water, typically in a 1 part pastis to 5 parts water ratio—watch for the beautiful “louche” effect as the cloudy transformation unfolds.
-
Adds depth when used as a flavoring agent for pastries, sauces, and marinades, showcasing its culinary versatility.
