Produced by Yukon Spirits / Two Brewers in Whitehorse, Yukon, Release 49 belongs to their "Special Finishes" line. Distilled in small copper pot stills from 100% malted barley, this small-batch single malt marries matured Yukon whiskies finished in select specialty wood casks, delivering layers of rich stone fruit, warm oak, and toasted spice notes.
Food Pairing: Aged Cheddar, roasted pork belly with apple compote, pecan pie, or dark chocolate ganache.
Tasting Notes: Golden amber with coppery highlights and medium-bodied viscosity along the glass.
Nose: Fragrant and inviting, opening with orchard fruit, honeyed cereal, and ripe plum, followed by toasted oak, vanilla bean, and light baking spices.
Palate: Smooth, round, and balanced on the palate, featuring sweet yellow peach, caramel, and malted grain upfront before developing into gentle nutmeg, cinnamon spice, and soft wood tannins.
Finish: Medium-to-long, warm, and lingering with notes of sweet fruit nectar, toasted oak, and gentle spice.
Serve: Enjoy neat at room temperature in a Glencairn glass, or with a few drops of water.
