Diatomists Amontillado Sherry
A striking expression of Jerez’s unique terroir, born from vines rooted in Albariza soils rich in ancient diatom fossils. This distinctive landscape, once submerged under the sea, imparts extraordinary character and complexity to the wine, resulting in a refined, layered style that reflects both heritage and innovation.
- Bright golden amber in colour.
- The nose opens with intense aromas of dried apricots and toasted notes from its early years under flor.
- The palate is structured and energetic, revealing layers of walnut, salted caramel, and subtle savouriness, all without overt sweetness.
- A long and complex finish lingers with hints of tobacco and spice.
Serve slightly chilled with charcuterie, aged cheeses, roasted game, or savoury tapas.
