Crafted from 100% Blue Weber agave harvested from the Highlands of Jalisco (Los Altos). Slow-cooked in masonry brick ovens, extracted via roller mill, and fermented using natural yeasts before double-distillation in copper pot stills at El Sabino (NOM 1643). Aged in American white oak barrels, this smooth reposado presents a balanced profile that combines highland agave's natural citrus and floral notes with soft vanilla, toasted oak, and light baking spices.
Food Pairing: Grilled chicken fajitas, roasted pork carnitas, fresh guacamole with totopos, mild cheeses, and fish tacos.
Tasting Notes : Warm golden straw hue with bright clarity and a smooth, medium-bodied mouthfeel.
Nose : Sweet cooked agave, soft oak tannins, fresh vanilla, light citrus zest, and warm pepper spice.
Palate : Smooth and balanced with roasted agave sweetness, subtle caramel, light wood tannins, gentle herbal undertones, and soft black pepper spice.
Finish : Clean, warm, and lingering with a pleasant fade of sweet oak, vanilla, and mild agave spice.
Serve : Serve neat at room temperature in a glencairn glass, over a single large ice cube, or as an elevated base in classic cocktails like a Reposado Paloma or Tequila Old Fashioned.
